Lentil, carrot and barley soup

Lentil, carrot and barley soup: a measured recipe with servings, timing, substitutions, storage and safety notes.

Illustrated ingredient board for One-pot family dinner with lentils and carrots

A hearty one-pot soup with lentils, carrots and pearl barley.

This recipe makes 4 servings and takes about 15 minutes to prepare plus 42 minutes to cook. Metric and imperial quantities are alternate measurements, so use one system rather than adding both. If you change the yield, keep the pan size and thickness of the food in mind: a crowded pan steams food and a deep baking dish can extend the cooking time.

Equipment

Set out large soup pot with lid, wooden spoon, ladle. A wide pan gives moisture somewhere to evaporate; for an oven dish, leave space between pieces so heat can circulate. Use separate board and knife surfaces for raw protein and foods that will be eaten without further cooking.

Ingredients

You will need: olive oil: 15 ml (1 tbsp); onion, diced: 150 g (5 oz); carrots, diced: 300 g (10½ oz); leek, sliced: 200 g (7 oz); garlic, crushed: 6 g (2 cloves); pearl barley: 150 g (5 oz); vegetable broth: 1.2 litres (5 cups); cooked green lentils: 400 g (14 oz); fresh thyme leaves: 5 g (1 tbsp); dill, chopped: 10 g (⅓ oz). Gather the ingredients before heating the pan so the aromatics do not burn while a measurement is being found.

  • carrots, diced — 300 g / 10½ oz
  • leek, sliced — 200 g / 7 oz

Method

Read the full method once, then prepare the ingredients in the order listed. Keep raw and ready-to-eat ingredients separate, and wash hands and equipment after raw-protein contact.

Step 1

Cook onion, carrots and leek in olive oil for 10 minutes until glossy and beginning to soften. Add garlic for 30 seconds.

Step 2

Stir in pearl barley, vegetable broth and thyme. Bring to a boil, cover partly, and simmer for 25 minutes.

Step 3

Add cooked green lentils and simmer 8 minutes until the barley is tender but retains a little bite.

Step 4

Ladle into bowls and scatter with dill.

Cooking and safety check

Bring soup to a full boil, then maintain a gentle simmer until barley is tender and lentils are hot. A time estimate and a browned surface do not prove that the centre is cooked. Use a suitable food thermometer where the ingredient or local guidance requires one, and follow the package or official instructions for the specific food.

Substitutions that respect the dish

A substitution should preserve the recipe’s job, not merely its colour. Use brown rice for pearl barley; it is gluten-free but needs longer cooking. Use celery in place of leek; celery is an allergen for some people. Use dried thyme, 1 teaspoon, for fresh thyme.

Allergen notes

This recipe contains or may contain gluten. Check every packaged ingredient because formulations and cross-contact warnings vary.

Common mistakes and how to correct them

Use one troubleshooting change at a time. If the centre is undercooked, return it to the appropriate heat and check again rather than relying on the outside colour. If the pan is dry, add liquid gradually; if it is watery, reduce uncovered. Texture may also reflect crowded equipment, a different ingredient size, or a changed batch quantity.

  • Rinse pearl barley before using to remove surface dust.
  • Keep the lid ajar so the soup does not boil over.
  • Cut vegetables evenly so they soften together.

Leftovers and storage

Refrigerate for up to three days or freeze for two months. Barley absorbs broth; reheat with a little additional vegetable broth until steaming.

Serving ideas

These sides and finishes suit lentil, carrot and barley soup without changing the recipe itself.

  • Rye bread
  • Grated hard cheese
  • Apple and walnut salad

Frequently asked questions

Can I use dry lentils?

Yes, cook them separately before adding because their timing varies.

Why is my soup thick next day?

The barley continues absorbing liquid while chilled.
